Q: Why is the app displaying in German or French instead of English?

A: The app uses your iPad region and language settings to decide whether to display English, German or French but will default to German language for users set up for German. If you would prefer to see another language then you can change your region and language under Settings > General > International. For best results you'll need to set both the language to English and your region to UK or US.

Q: What do I have to consider in the chapter "Vegetarian", when certain types of cheese, for example Parmesan, are used as ingredients?

A: In cheese production, milk is brought to clotting by injecting fermented milk bacteria or rennet. Usually, animal rennet is used, an enzyme from the stomach of young mammals (calves, lambs or goats). In the past, cheese was produced with a rennet-ferment from the pistil of thistles in the entire Mediterranean area. Since around 20 years, microbial rennet cultivated from a certain mushroom is used more and more for cheese production; lately also increasingly genetically-engineered rennet. In the meantime, microbial rennet is used for many types of cheese from ecological production. There are manufacturers even for classic cheese types such as Parmiggiano-Reggiano (Parmesan), who offer variants with microbial rennet. If you set value to your food not containing animal rennet, you should make sure to use only types of cheese that were produced with microbial or vegetable rennet. Your cheesemonger will be able to provide information when in doubt and can offer alternatives if need be.
